"Well, I'm guessing it has something to do with changing the state of matter that the cheese is currently in, probably from a liquid form, like milk, to a solid form like a block of cheese. I'm guessing it only works on dairy products too from the 'lac lactis' bit, cause that sounds like lactose." he suggested.
