I can't pick just one! That said, I love "HBP" because it gives you a little background on why Snape was so bitter and cold toward Harry (i.e., because of James and the other Marauders picking on him).

"Deathly Hallows" pt. 2: How can you beat an ending like this? Plus, you really get to see Neville come out of his awkward phase and be a true hero in the series.
