I don't think it's what your character's smells are, I think it's more like scents evocative of strong emotional bonds. My inclination is to assume that this could be an object, a place, a person or several, or even an activity. So even if a character doesn't have romantic interest in anyone he or she might still smell something when they take a whiff of Amortentia.
