In short, no there's no 'set amount of money'. The wealthiness of your character is completely up to you.
Also, you don't
have to set up an account at Gringotts. Nor do you have to roleplay there in order for your character to have money. You can simply roleplay with your character having however much money he/she needs when paying. We do encourage roleplaying at Gringotts, though, as it gives you an opportunity to interact with more characters and enhance your roleplaying experience.
In the end, it's completely your decision.
